Process Washed

Washed process

This coffee is processed as a classic washed. Smallholder producers delivered freshly harvested cherries to cooperatives, where they were meticulously sorted to ensure only the highest quality fruit was selected for processing.

The process began with depulping the cherries to remove the outer skin. The beans, still covered in mucilage, were then transferred to fermentation tanks for a period of 12 to 36 hours. During fermentation, skilled workers closely monitored the conditions, ensuring optimal enzymatic activity while carefully preventing any risk of over-fermentation.

After fermentation, the mucilage was removed by washing the beans in clean water. This step was often performed using traditional washing channels or manual agitation, ensuring thorough removal of residues. The washed parchment coffee was then dried on raised beds, typically for 7 to 14 days, until the moisture content reached the ideal range of 10–12%.

Gaitania coffee is a product of the collaborative efforts of the Indigenous Nasa Wesx community and the ACEDGA (Asociación de Caficultores Ecológicos de Gaitania) and ASCISP (Asociación de Caficultores Indígenas de San Pedro) cooperatives. Nestled in the high-altitude region of Tolima, Colombia, Gaitania is a unique terroir that combines volcanic soils, temperate climate, and traditional practices, resulting in coffee with extraordinary flavour and character.

The Nasa Wesx people, the Indigenous community of Gaitania, bring generations of agricultural knowledge and a profound respect for the land to their coffee-growing practices. Their commitment to sustainability and biodiversity preservation ensures that the coffee reflects the pristine environment in which it is grown. By working closely with ACEDGA and ASCISP, the Nasa Wesx community has elevated its coffee production, gaining access to resources, training, and markets that value their cultural heritage and high-quality coffee.

ACEDGA & ASCISP Cooporative

The ACEDGA is a cooperative of smallholder farmers who prioritise organic farming and ecological conservation. ACEDGA’s mission is to support farmers in producing high-quality coffee while safeguarding the environment and promoting sustainable practices. Focusing on Sustainability, ACEDGA members adhere to organic principles, minimising chemical use and protecting local ecosystems.

The ASCISP is another cornerstone of coffee production in Gaitania. This cooperative is deeply rooted in Indigenous traditions and focuses on empowering its members through education, innovation, and sustainable farming practices. The ASCISP supports experimental processing techniques and quality control measures, enhancing the complexity of its coffee offerings. Moreover, the cooperative funds projects in education, health, and infrastructure, uplifting the entire community.
