Bourbon Variety
This lot is 100 percent Bourbon from Finca La Guachoca. Bourbon is one of El Salvador’s most historic varieties and is known for its balanced sweetness and clean structure. The Pacas family also discovered the Pacas variety, a natural Bourbon mutation, on their own farm in Santa Ana. Their work has shaped the genetic foundation of specialty coffee across the region.
Natural Process
This is a Natural process. Ripe cherries are handpicked, sorted with care and dried whole on patios and raised beds at Vivagua Mill. The cherries start in a thin layer for fast drying, then are thickened for slow, even development. They are turned throughout the day and protected at night. This method creates a clean and sweet cup with bright fruit and a smooth finish.
