Java Variety

Java is a low yielding but high quality variety with Ethiopian origins. It grows best at high elevation where slow cherry development creates clean sweetness and floral aromatics. The trees are sensitive and produce fewer cherries, but the cup quality is consistently high. Java is known for a smooth texture, balanced acidity, and a clear and expressive flavour profile. It often shows gentle fruit notes and soft florals that make the coffee feel refined and easy to drink. Many producers choose to grow Java because it delivers reliable quality even in challenging conditions.

Natural Process

Only the ripest cherries are handpicked at Villa Betulia in Acevedo, Huila. After careful sorting and floating, they undergo a 45-hour aerobic fermentation controlled protocol, designed to highlight sweetness and structure. The cherries are then dried on parabolic dryers for 10 to 15 days, turned regularly to ensure balance and clarity. The result is an expressive and refined cup with notes of lavender, lemonade, and red fruits, layered with caramel sweetness and a clean, delicate finish.

Luis Aníbal Calderón is one of the most influential figures in modern Colombian coffee. He was one of the early adopters of exotic varieties in Colombia, introducing Geisha, Sidra, and Java long before they became fashionable. Each variety is cultivated with intention and precision, from soil management to controlled fermentation, resulting in coffees that are expressive, structured, and clean.

When low prices once threatened his livelihood, he shifted focus toward quality-driven microlots, investing in research and post-harvest innovation.
