Esmeralda Special
Noria 3 forms part of the Esmeralda Special collection, a tier reserved for the highest performing microlots from Jaramillo. These lots come from defined blocks on the mountain where the cold air, steep slopes and mature shade trees create an ideal environment for Geisha. Jaramillo is the site where the Peterson family first recognised the potential of this variety, and its slopes continue to produce some of the most influential coffees in Panama.
Geisha thrives here because the altitude, volcanic soils and slow maturation support its delicate structure. The variety carries a genetic profile from Ethiopia that expresses clarity, florality and refined sweetness when grown under stress in cool conditions. Jaramillo shaped the modern understanding of Geisha and set the benchmark for separation, precision and quality that define Panama’s highest value coffees.
3 NBI Process
Hacienda La Esmeralda uses a clear code for each microlot. Noria 3 NBI denotes the third harvest from the Noria block, processed as Natural and dried on raised beds in Batch I.
Noria 3 NBI was harvested and dried as a Natural on raised beds for 68 days. The slow pace of drying at Jaramillo’s elevation helps stabilise sugars inside the fruit and preserves the clean floral character. The extended time on beds gives the cherries the space to dry evenly without heat spikes or fermentation stress.
This approach supports a transparent expression of Geisha while adding depth from the Natural process. The method is chosen for control, repeatability, and a balanced structure that suits the altitude.
