This coffee was processed with an anaerobic fermentation process, which entailed 24 hours of drying and 90 hours of fermentation in GrainPro bags at 22°C. In this environment, the bacteria thrive on the sugar in the mucilage, leading to a higher concentration of lactic acid. Subsequently, the cherries were dried on raised beds for seventeen days until they reached an 11% moisture content.

Papayo is a rare mutation variety in Huila. It has yellow cherries and a shape like that of papaya.

Felipe is the fourth-generation of coffee grower that is also the co-founder of Cofinet with his brother Carlos. Having been told that the coffee business would not be profitable, both Felipe and Carlos moved to Australia to continue their masters in civil engineering.

After graduating from college and returning to Colombia, Felipe was amazed at how advanced the coffee industry was in Australia. He began spending more time looking at it and became even more determined to dive deeper into specialty coffee, which lead them to acquire a farm to grow exotic varieties.

Papayo is a rare mutation variety that occurred in Acevedo, Huila. This variety has yellow cherries when ripe and a shape like that of papaya.
